They've been there for generations without problems though. Why are the White Walkers and Wights just now gathering to attack the South? Well, I guess that's not answerable just yet.

The White Walkers haven't been seen for a thousand years. Remember S1E1 when nobody believed the survivor of the attack in the prologue?

And as demonstrated last season that's how Joffrey gets his kicks.
Given Ros' last encounter in Joffrey's bedchamber with Daisy I would guess that she was taken there against her will because if she were summoned then I would think that she would have informed Varys of her whereabouts or dealings where Joffrey was concerned.

In terms of how she found him, Groucho is right. It's worth noting that this is a difference from the book -- in the book, they used a different bastard of Robert's, one whose location was known (and who was located somewhere much more accessible to Stannis than Gendry, who was in the middle of a continent-wide war zone).

I don't remember any lines about Stannis sleuthing around with Jon Arryn in season one.

There wasn't. Stannis said in s02e01 that Ned Stark found out about Joffrey's lineage and told only him. He wasn't going to make the same mistake and therefore had Davos's son, Matthias, send ravens with the meticulously-crafted message all over the realm.

Excerpt from Esmé Bianco's interview on hbo.com.

HBO How did you find out about Ros' death?
Esmé Bianco I got an email from the production about the scenes I was going to be in. I remember thinking, "Oh that's not quite as many episodes." Then I got a call from David and Dan. They were so sweet. They called me themselves and broke the news to me. In all honesty, it's amazing she survived as long as she did, considering that Ned Stark lost his head in Episode 9 of Season 1. But I didn't know immediately how it was coming about. I was furious when I found it was Joffrey—Joffrey of all people?
HBO Do you think it was better that we didn't see the details?
Esmé Bianco I think so. We see a lot of gory deaths on 'Game of Thrones.' It's another example of how evil Joffrey is and how cruel, but I like that you don't actually see it happening. I think there's more of a shock. I've seen stills and it looks absolutely beautiful, like a painting. Really, every scene she's been in is like a Caravaggio. I'm just glad she didn't get her head chopped off.
HBO Littlefinger warned Ros before about protecting his investment. Did she know the risks?
Esmé Bianco I think she did and possibly, she underestimated Littlefinger. I think she knew there was an inherent risk when she started spying for Varys, but it was something she knew she had to do if she didn't want to be Littlefinger's whore for the rest of her life. You can't get anywhere in life without taking risks. She realized it was part of the game she was playing, but I don't think she knew it would come to this. She probably thought that Varys could protect her more than he could.

Shouldn't the white walker army have been at the Wall by now?
I mean when we first see them (Sam hiding behind the rock), I figured it's somewhere between the wildling "city" and the Fist of the Northmen with the wildling city being farther north. Then we see the results of the battle/slaughter at the Fist. If the Walkers kept moving south they should have reached the Wall before either the Night Watch or Mance's advance party.

Hmmm... I know Jon and Stannis sleuthed around together in the book, so maybe that's what I'm remembering. If I'm wrong, then we have to go back to the old standby, Lord of Light Witch Magic.

Wouldn't that be a twist if Joffrey turns out to be quite the deadly bowman. George RR Martin seems to like playing with reader expectations of the characters.

Still, a prequel called "Arryn and Stannis" where they solve crimes in their spare time would be awesome. Especially if the use the Magnum PI title music.

Finally, I'll say this about Theon: to the casual viewer, I have him on a list of nonredeemable characters along side with Cersei, Joffrey and Jaime. I could forgive him turning on Robb to win his father's love again, but to sack the North the way he did isn't something I can forgive. Understand that (imo, from discussions with many others) the Stark are pretty much presented as the protagonist of the show, Eddard was the real Hero, now it's pretty much split between Robb, Jon, and Arya, these are characters you can't mess with. That being said, I think that many hope for Robb to win the war, or perhaps just retain his independence in the North, and since Ned wanted to put Stannis on the throne, this is what I hope to see as well. Theon being tortured is sort of overdone at this point, but something he deserves.
