Was McCoy really a captain? I know he was admiral, which implies captaincy at some point.. but is it possible to have an "honorary" title or something? That was my only hold-up from choosing him.

I don't recall McCoy ever being designated as a Captain. His appearance as an Admiral on the TNG pilot may have been an honorary title or he may even have received a leap-frog promotion.
