Well, you just listed one: The Daily Show at 10:00pm EST weekdays.
It's this simple: if it's on Sunday nights on HBO, watch it. Don't ask questions. Just watch it.
Also keep an eye out for classics like South Park, new on Wednesdays at 10pm EST on Comedy Central and repeated 3 or 4 times after that.
On the Sci-Fi channel, Farscape and The Invisible Man (currently cancelled, but likely in repeats and worth watching).
On Bravo, Inside the Actors Studio.
On Showtime, The Chris Isaak Show.
ESPN ... Pardon the Interuption, weekdays at 5:30pm EST.
I assume we're talking original programming and not syndicated stuff, else I'd list a few hundred shows.
das

What I watch...
Iron Chef (Food Network) - Who would have thought that they could turn cooking into a game show?
Battlebots (Comedy Central) - Watch people work several several months on a bot, only to see it mashed in less than 3 minutes.
Junkyard Wars (TLC) - Same thing, second verse. Can we bodge it up?
Quantum Leap (SciFi Channel) & Babylon 5 (SciFi Channel) - Two excellent series.
