If I canceled an order that was placed before using Gift certificates at Amazon, will I get those GCs back into my account instantly?

Yes, as long as the gift certificates don't have an expiration date that has passed.

I got a question:
I've got a ton of amazon gc's in my account. They've been added in. Now, when they expire, do they just dissapear or does the expiration date only deal w/ the last date you can add them to your account?

That's actually something you should ask Amazon directly. I certainly have assumed that any GC not used by its expiration date will expire, regardless of whether I have placed it in my account or not. I doubt that anyone else here has taken the chance of letting their GCs expire so as to give you a definitive answer to your question. Call Amazon and ask -- it's a toll free call.
