Romero films: Human Victims VS Comet or unknown; Suffer no systemic damage bar brain.
Return of the Living Dead: Human Victims VS Gas; Every cell alive always like The Thing..
WWZ: Human Victims VS Virus; brain kills work for us.
Night of the Comet: it was a comet.
28 Weeks and/or Days ...Later:-Duck and/or zombie like behavior. Suffer systemic damage and prone to starvation.

I'll reluctantly tweak my original belief a bit that they're not traditional zombies and give you that they may be a type of Zombie. They're definitely NOT the "Romero Living Dead " type because as the OP pointed out, they die from starvation and Dehydration after a period of time. Also, they don't die in the process of being infected. Another thing is in the 2 movies show they show that they don't eat their victims. Perhaps if they did they'd last longer.....

Like I said, I'm only "tweaking" my initial idea. I still wouldn't use the word when talking about them and I wouldn't call the 2 movies "zombie films".

Well, I tried to find a good reference definition for the sake of Kudama's sanity. First attempt was mildly rewarding, but not terribly:
It's pretty hard to read about any kind of ancient Voudoun mythology without stumbling over something about zombies. Basically, if all zombie / undead movies were judged on that, then there'd be no "zombie" movies. just a bunch of random infecteds. So, after a quick shot over to Wiki for something a little more concrete:

The bolded material is pretty much how I see "zombies" (though I really liked 28 Days Later, I'm not much of a zombie-schlock fan). The infecteds in 28 Days / Weeks Later were running on pure motor reflexes and instinctual thirst for flesh - so I guess that makes them devoid of a human soul. 
EDIT: Tinkered with the "infectids" spelling, as I assumed that was akin to the species name in the film.

I always considered zombies=re-animated corpses. The infected never die, and thus aren't re-animated corpses IMO.
But really, I couldn't give a shit less what they are. 28 Days Later is an excellent horror flick, and Weeks is decent regardless of what you want to call the infected.

NOT zombies. They aren't dead when they become infected, zombies are resurrected dead. End of story. They don't necessarily want to eat people, they just tear them apart and probably eat them simply to sustain the energy needed to run that goddamn fast.
