Do you have iTunes? The songs usually have rankings in there.
If nothing else, just get a track from each of their last 3 records.
As The Palaces Burn was their breakout release, so at least check out something from that.

This is a tough one, since no two releases sound the same.
New American Gospel is pretty brutal...not nearly as polished.
As the Places Burn is same brutality, but slightly polished.
Ashes of the Wake (my favorite) is a little more progressive, but not losing the intensity.
Sacrament is a tough one...most people seem to think that "Redneck" is the song that sums up the album. Ironically, that is the only song that sounds like that. Much like Ashes things are more progressive and way more layered.
If you like the harder stuff stick with Gospel & Palaces (also check out Burn the Priest, the band's name before LoG). If you like it a little more polished go for Ashes & Sacrament.

I'm just gonna go with a couple of pretty much all time favorite Lamb of God songs..
The Faded Line - Ashes of the Wake - Great song, easily my favorite for so many reasons, very heavy, very progressive (on the short side of the progressive spectrum however)
11th Hour - As the Palaces Burn - Always a favorite, always played with intensity, you should really like this one.
Black Label - New American Gospel - Really gritty, but it's an awesome song, good indication of how they started out.
Descending - Sacrament - It's a really good album, people are way too nit-picky, this is easily the best song on the album IMO.
