For Squirrels - Example (had one album, some band members died in a car crash)
then..
Rival Schools - United by Fate (Walter Schreifels band after Quicksand, never got to making a second album)
Desaparecidos - Read Music/Speak Spanish (Conor Oberst's band, I like this better than Bright Eyes)

I too was going to mention PRICK but see it's already listed above... 12 years later, it's still a great album (with trent reznor input)...

Industrial band featuring John 5 (of Marilyn Manson fame). While I don't like Manson, John 5 is pretty talented and this band only had one EP which was pretty damn good. I would have liked to see them continue.
Also Oysterhead and the other Les Claypool projects that only have one release SO FAR.

The best one-off of this type in my opinion would have to be Cardinal, the Self-Titled album from Eric Matthews & Richard Davies side project. Probably superior to what either has achieved solo or with other groups.

Notwithstanding is one of my absolute favorite albums, got great critical reviews and just didn't sell for some reason. They actually did write/record a second album after getting dropped by their major, but the independant label they set up had no distribution and the album was only available on their website. The band was so disillusioned that they just called it quits. If I'd known at the time I would have bought a copy, but they don't even return e-mails and the page hasn't been updated in years.

I'll second Temple of the Dog.
Extreme / Tribe of Judah / Van Halen singer Gary Cherone did a solo EP, and I wish he'd record another one. Much like Chris Cornell, his solo albums are notable because they allow him to sing in a style different than what he releases with his various bands.
Speaking of lead singers that release unique solo albums, I'd love for Queensryche's Geoff Tate to release a second solo album.

supposedly they are releasing another album late 07, early 08...Ben Gibbard from Death Cab for Cutie and Jimmy Tamborello from Dntel. But damn that was 03? time sure flies.

Snake River Conspiracy - All they had was Sonic Jihad which I thought was a pretty strong album..Toby the lead singer left, and they couldn't put together a second album with a new singer.
The Souls - Swedish rock band fronted by a chick, album was called Bird Fish or Inbetween...they just dissapeared, I really like the album..I think Gavin Rossdale had some help in getting them signed.
