Hasil Adkins was a true one man band.

He probably did that with other albums, but that's the only one I know for sure.
Hermit Of Mink Hollow, Healing, and A Cappella are all-Todd, as well (or, all-Todd's-voice-run-through-an-Emulator, in the case of A Cappella).

Roy Wood (ex-ELO and the Move) recorded the eccentric pop masterpiece Boulders all by himself (except for harmonium on one track). It's an especially impressive one-man-band job... because Roy not only played the usual guitars, bass, drums, and keyboards, but also banjo, saxophone, cello, recorder, flute, bassoon, and sitar. He even painted the album cover.

Another big name one-man-band: Stevie Wonder. "Higher Ground", "Living For The City", "I Believe (When I Fall In Love It Will Be Forever)", and "Knocks Me Off My Feet" are some of the prime 70's tracks that are all-Stevie.

Actually Dave did record drum tracks for With Teeth, but Trent then decided to go a different way. Little or none of Dave's Drumming is on With Teeth. To my knowledge none of it is.

I'm pretty sure Ben Folds played all the instruments on his first solo album, Rockin' the Suburbs (2001).

I think Grohl also played all the instruments on the Probot album too (not the vocals, obviously).

However, of these, only Hasil Adkins played all his own instruments live as well.

I'd say Beck. He plays most the stuff in his albums.

Jason Falkner plays all instruments on his albums-extremely well, I might add.
