Surprised it took this long for Buckethead to be mentioned. I'll also add anything off Colma any number of songs from Electric Tears, Welcome to Buckethead Land, Giant Robot as well his work in Praxis with Bootsy Collins/Bill Laswell etc, etc...

If anyone is unfamiliar with him, he's one of the most prolific and diverse musicians to ever grace the planet. A complete monster on the guitar.

His discography is as impressive as any modern artist.

There are many many rock instrumentals (check out Surf Noir or Guitar Noir) but it is hard to beat "Beck's Bolero", especially since it includes Jeff Beck and Keith Moon (drums, of course). Moon's scream at the end is awesome.
