Fargo but it's a closer call than I would have thought. NCFOM is a modern classic. But Fargo made me aware of the Coens and is infinitely rewatchable. These are probably my #1 and #2 favorite Coen films now, with Hudsucker Proxy perhaps in between them.

Fargo easily. It's simultaneously dark and funny, calmly paced but still full of life, and sidesteps any predictability. It's one of the few movies out there that I regularly return to, and it's the Coens in top form.
NCFOM is quite good, and Javier Bardem is terrifying while onscreen, one of the best villains I've ever seen. I've only seen this once and mean to return to it, but it didn't quite get its hooks into me like the Coen Bros' movies usually can.
But pitting these two movies against each other isn't productive, because any film lover should see both.

I thought the final half-hour ruined NO COUNTRY FOR OLD MEN. I thought the entire 97 minutes ruined FARGO. All that McDormand "Yah, you betcha" schtick was like chalk screeching on a blackboard. So I voted for NO COUNTRY on the basis of its first 90 minutes.

Him talking about his dream is what I presume to be a metaphor for him chasing down Chigurh. He decides he's too old and not up to it and chooses the safe path of retirement. All the talk about the world and times changing earlier in the film is what I think of during his ending monologue.
Maybe I'm way off but that's my take.

Wow. I never got that from the ending at all. But I love that different people interpret the dream and the ending in completely different ways.

I think that the Coen's could film a camel taking a dump and the critics and their cinephile fans would do a collective wank fest over the film merits of such cinematic value - they along with P.T Anderson are so overrated IMO.

No Country for Old Men.
I saw it in the theater, and was completely drawn in by the desert landscape. Everyone in the movie is smart, especially compared with the dumbasses in Fargo. The movie impressed me enough that I went out and read books by Cormac McCarthy. No Country has energy. Fargo is bleak and dreary, and I don't rewatch it. I think I would rate Fargo below Miller's Crossing, making it my #3 favorite Coen Brothers movie.

Tough one, I really like most Coen Brothers movies and these are two of their best. I'd probably give it to Fargo by just a bit because I've seen it more times and it's just really memorable. No Country for Old Men is bad ass though too but it's more of a movie I have to be in the mood to watch.

But No Country for Old Men is one of my favorite movies. I saw it in the theater 3 times in 4 days. I fell in love with it instantly. It's one of the Coen Brothers bleakest and existential movies. I love the lack of music. It adds to the tension and the expansiveness of the movie.
I've been a huge fan of Blood Simple for a long time and NCFOM really reminded me of that flick.

The main difference, to me, is that NCFOM has that mythic quality that makes it feel timeless (this is probably largely thanks to McCarthy's source material, but no matter). I can imagine people in 100 years watching it and still being impressed by the artistry and story. I think Fargo is far too idiosyncratic and of its particular era to have the same shelf life.

I just rewatched Fargo for the first time in years and loved it but it felt short and like
something was missing.
This might be because of the first season of the tv show which to me felt like the movie but expanded to include all the things they couldn't fit in the time frame of a movie.
No Country would be my choice of these two.
I think it is closer to being timeless like Moviepage said.
There is soemthing mythical about it and the end was great.
