I believe the last two were Million Dollar Baby (too depressing actually seeing as how we were going to a Caribbean Island) and The Golden Compass to and from, respectively.
Tried not to watch either movie (seen MDB before, though) and just listened to music; although I did glance to the screen every once in a while.

A month ago I flew from DC to Hawaii through LA and on both legs out there they showed City of Ember.

Nim's Island...TWICE! I tried to watch it the first time, but after 30 minutes I gave up. On the trip back I was dreading having that horrible Breslin girl on so many tiny screens.
Lord of the Rings:FotR. I loved this one and watched it about 3 times in a row. Was during a flight to Rome.
Waitress. Not bad at all.
Casino Royale. Decided not to watch it, since I thought the airline would butcher it.

I flew from Dallas to Ft Lauderdale and they showed a movie. Can't remember which one. I wasn't really paying attention. I just thought it was odd that they were showing a movie.

Fantastic Four. I think they were charging $4 each or something for headsets, and we said no. It was noisy and pointless even without sound.
Other than that, all I've seen is football reruns.

Not sure what it is like in the US, but most airlines I fly here in Canada tend to have those little PVR type devices in the headrest ahead of you, so you can choose from a great deal of movies, shows, radio stations, etc. And those are for all flights, even short ones of barely over an hour.

Nothing. As a kid I would just sleep if the movie sucked, and now I only fly on Jet Blue so I get my own DirecTV monitor. In-flight movies blow.

The only one I remember where I didn't have my own movie gear was Taxi with Jimmie Fallon. Ugggg.
On a related note, flying internationally on Quantas is awesome. They have a VOD system where you can choose from about 20 movies.

My bad airplane movie list:
Serendipity
Hoodwinked (right in front of me on a big screen and the color was all off- the whole movie was yellow- it made me physically sick)
Last Holiday
And two that I recall being mildy entertained by: Chocolat and Rat Race.

The Golden Compass.
Normally I am deeply in love with Nicole Kidman, but the movie was such garbage I don't care to ever see it again.
Longest flights I took were from LAX to Madrid and back when I was a Mormon missionary. On the way there we saw Only You. Blech. On the way home we got to see Toy Story. The plane was full of soldiers coming home from deployment in Germany and when the movie was over, they asked the flight crew to show it again, as their base had no American movies at all. And when the second showing was over, the flight crew wanted to show the other film they had on tap, which was The English Patient, but NOBODY wanted to see that, so we watched Toy Story a third time. I didn't mind at all.

Re: Movies you were forced to sit through on an airplane
I've only had a couple movies in general.
When I flew Iceland Air in 2004, I found out the Icelandic people were obsessed with Steve Martin. On the way to Europe they showed Planes, Trains and Automobiles, which struck me as odd, since the catalyst for that movie involved an airline not doing well. On the way back they showed the Out of Towners remake, however, it ended about 20 minutes early, as we were landing.
Other than that, I only recall seeing Free Willy and Shakespeare in Love, two decent movies.
