I believe they quickly reshot a recap from part one because they couldn't get the rights to show scenes from Evil Dead. IMO, it could certainly be seen as either a sequel or remake.

I don't see how Evil Dead II could be considered a remake of Evil Dead. It clearly takes place the night after the events in the first film. It's like saying Halloween II is a remake of Halloween, or Hellraiser II is a remake of Hellraiser.
