Slightly different from the others given that this is a much shorter time period, but
Seth Rogen- went from clean-cut glasses and sweater wearing 18 year old college freshman in Undeclared to the unshaved big haired 30-year old lookin guy in 40 Year Old Virgin in just a few years.

Kiefer Sutherland - I remember when the first season of 24 started and they showed him with his wife and his teenage daughter, and I kept thinking "He's not even old enough to have a teenage daughter!". I couldn't get over the fact that he was in his late 30's already.
