Hmmm, I don’t think anyone mentioned what to me are the most obvious ensemble cast lists, namely The Godfather and The Godfather II.
Lest we “old-timers” get left out of this thread, here are some star-power assemblages from some classic films. I’ve included most names recognizable to American audiences.
