Peter Jackson has already confirmed that:

1) There will be no Scouring.
2) ROTK will end with an epilogue/Galadriel voiceover to mirror the prologue/Galadriel voiceover at the beginning of FOTR (yay! perfect ending...and "Well, I'm back" could be in there somewhere).

Also, I've seen reports that scenes involving Frodo back in Bag End were filmed, but who knows if they'll be in the theatrical version (Wood reports filming the line, "It must often be so, Sam, when things are in danger: some one has to give them up, lose them, so that others may keep them" - I hope this makes the final cut, *sniff*).

No scouring of the shire, end with Frodo et. al. sailing off to the Gray Havens.

Incidently, that's how it's rumored to end.
