Wasn't OJ Simpson supposed to have a role in Terminator? That would have been a disaster.

Are you sure you don't have this confused with Dracula? Bela Lugosi did a screentest as the monster, but later refused the part.
Chaney was set to play Dracula (Which came first) but died suddenly.

Others I would've liked to see:

Truer words have never been spoken.

He's miscast in anything where he isn't playing a slacker type. That's how small his range is. When he was nominated a few years ago for best supporting actor I almost had to vomit. Denzel Washington's performance was so big that it actually made Ethan Hawke look credible (at least for the academy)

And whoever thought it was a good idea for Paul Newman to be considered for Max Cherry in Jackie Brown should be shot. Dead. Imagine Paul Newman, arguably the whitest of big old hollywood stars still living listening to soul music and kissing Pam Grier. Cringe.

Kevin Costner was going to be Jack Ryan in The Hunt For Red October, but did Dances With Wolves instead. Supposedly, Air Force One was his role that he passed onto Harrison Ford.

Lori Petty was fired from Demolition Man and replaced with Sandra Bullock.

Sean Young either got pregnant or injured herself before Batman and was replaced by Kim Basinger.

Annette Bening got pregnant before Batman Returns and was replaced by Michelle Pfeiffer.

Mission: Impossible 2 shooting went long, so Dougray Scott was pulled from X-Men and replaced by Hugh Jackman.

Val Kilmer had Mark Ruffalo's role in Collateral, but his Alexander commitment conflicted.

Matt Damon couldn't play Colin Farrell's Minority Report role because of a schedule conflict.

He was considered. They wanted Arnold to play Reese. But they felt that OJ wouldn't be believable as a killer.

Well, I knew it was one of the two roles. Always thought it was Frank because of the make-up involved.

Wasn't Ralph Macchio up for the role of Marty McFly? I think MJF was great in that role, but in the realm of bad career moves passing on the BTTF series was a mistake, Danielson.

BTW, where do y'all get all of this info from? Some pretty fascinating stuff.
