I vote for The Mayfair Witch series by Anne Rice. There is also The Sleeping Beauty trilogy that she wrote under the name A.N. Roquelaure...but I think that would have to be done by the porn industry.

anything by Michael Connelly w/ the Harry Bosch character. I'd also like to see The Westing Game made into a movie.

After seeing several Stephen King novels mentioned here, I'm a little surprised to see that no one has mentioned my favorite non-filmed work by King.....Gerald's Game. It may be too dark to film, plus 3/4 of the film would include a semi-nude woman tied to a bed. Hey...maybe thats a reason to film after all!
