Can't speak for Mirror but I have the UK 2-disc Artificial Eye release of Stalker. Video seems as good as it gets to me, given the source material, i.e. it's not stunning but it's not terrible either. I think they've done a decent job with it. The 5.1 and mono soundtracks each lend a quite different ambience to proceedings, so it's good that both have been included.
