The French Edition as it's Uncut, Anamorphic and has a French DTS soundtrack. No subtitles though.
Although if you want English subtitles you will need to decide between the Region 0 for being Anamorphic and having more Extras or the Region 3 for being Uncut, although it's Non-anamorphic.

I went with the Korean releases based on Rewind (links below).
The Korean release of the first one omits a very brief shot of the chick (can't remember her name) getting out of bed and flashing bush. No big deal. I'd seen the uncut version and it's not missed.

The best versions are in a boxset in France without English subs. If you need subs then I would suggest you pick one of the Asian versions...the uncut non-anamorphic R3 Taiwan version or the cut anamorphic Korean versions. However....they all have their flaws...they appear ports of the French versions (Taxi 1, 2 and 3).
On a side note most recently a Taxi 3 HD version was released in France which boasts a superb audio quality. In fact the disc was specifically marketed to test the highly popular LCD screen designs (and target the PC viewers audience...in a similar way T2 was marketed in the States). Sadly Taxi 3 is a poor film at best.
