True HD and DTS HD on 360 and PS3
Can I get some help here on getting my new Onkyo TX-SR605 to see these sound formats out of those 2 divices?
I get DD and DTS, but the HD formats dont show on the reciever.

The 360 isn't capable of passing lossless 5.1 audio, period. You'll need a standalone HD DVD player to do that. (I think this holds true with the Elite models too, but I'm not 100% sure.)
The PS3 can decode TrueHD to PCM over HDMI to your receiver, but it can't pass TrueHD to it directly.
Nothing on the market right now can pass DTS-HD MA right now, and no players can decode it either.

Yeah, I have the 360 elite, so both systems are wired to the reciever with HDMI.
Now, I know this is a shot in the dark, but is this something that will be available with either system updates? Rumors? Anything?
And that PCM 2.0 won't sound right will it? Thats just 2 channels correct?

It's like having a key but never being able to make your way to the lock.The 360 can't properly handle these newer codecs and will never be able to, at least unless they release a re-engineered console. I've read that because of the particular implementation of HDMI that the PS3 is using, it won't be able to either unless a revised console is released down the road. It's reportedly beyond the scope of a firmware update.
You're fine with the PS3 -- the console can decode TrueHD (and possibly DTS-HD MA at some point) to PCM, and your receiver won't have any problem with that. The 360 add-on is compromised in terms of its audio options.

To put what Adam is saying in layman's terms:
PCM is lossless. Dolby TrueHD and DTS-HD MA are also lossless. What the PS3 does is it converts the TrueHD lossless sound, which it can't send over HDMI, to PCM, which it CAN send over HDMI. What you're getting is the exact same audio, it just says PCM instead of Dolby TrueHD. The PS3 might be updated later on to decode DTS-HD MA.
The 360 is not capable of producing lossless sound higher than 2.0. It's the way the system and the add-on are built, and nothing can change that.
PCM is lossless. Dolby TrueHD and DTS-HD MA are also lossless. What the PS3 does is it converts the TrueHD lossless sound, which it can't send over HDMI, to PCM, which it CAN send over HDMI.
