Some others that stood out for me:

Open Range - Great in depth documentary that shows how the film was created from script to screen. You get to sit in on production meetings and location scouting too.


Daybreakers - I hated the film, but it has an over two hour documentary that covered every aspect of film making starting with writing a script and casting. A must see if you are interested in film making.
