While it covers three movies, the 4 disc in the first Star Wars trilogy was a great 3 hr+ documentary, which even includes a few deleted scenes and alternate takes. While there's tons more footage out there on the Star Wars films, this one is pretty good and worth watching. That particular box is out of print, but I see it used all the time.

Also, the documentary "The Beginning" on the Ep 1 The Phantom Menace set is a great making-of.
