MST:3000 set with Godzilla (later reissued with replacement title). Maybe Walking Tall trilogy, but that was just because it went up in price, not because I love the movies.
I know there are must be a few other titles I've missed, but none come to mind right away (maybe because they weren't major wants). For a few, I had to pay list price because the things went OOP before a DD 20% off sale, for instance, but I have rarely had to pay "collector's prices".
However, I do have quite a few that I owned & sold too cheaply (which probably need to be in a separate thread). Ilsa (bought several sets for $12 each in a BOGO sale & proceeded to sell most of them for $25 each. Six months later they were fetching around $200); Wizard of Oz; Streets of Laredo, etc. Worst of all, sold a Little Rascals Cabin Fever set of 5 DVDS (four still sealed) for around $30 when I got the "Complete" set. Usually research before selling, but had a brain glitch & impulsively sold the set (which is extremely rare, especially sealed copies) and fetching hundreds of dollars. The worst irony is that the person would actually have been much happier with the newer complete set, which Amazon sold recently for $38.99. Sometimes you just gotta laugh at your own stupidity.

I agree.
I had trouble finding Vol. 4. I finally found someone on half.com that was selling it at a reasonable price. Paid $45 for it. It was worth it.
The Walt Disney Legacy Collection that features the True-Life Adventure Films. I assumed they would be around for a while and put 'em off, but noticed they quickly vanished from retailer shelves. I was able to pick up Volumes 2 & 3 from Amazon, but 4 is out-of-print and Volume 1 is really out-of-print (2nd-hand sellers want $x3)

None. I have an uncanny knack for knowing when to buy discs and when to hold out (for a cheaper price or better release). But then again I'm a bit of an odd duck since I don't collect DVDs but the movies and TV shows that are on them. By that I mean that I don't need to hold out for the cheapest price or the absolute "best" (whatever that means) release.
But there have been quite a few close calls... "Demons" was one of them.

I used to work at Sam Goody back in 2001-2002. At the time, I wasn't really a wrestling fan anymore, so I bought any of the WWF DVDs available. I can vividly remember stocking and seeing brand new copies of:
WrestleMania XV
WrestleMania 2000
WrestleMania X-Seven
Royal Rumble 2001
No Way Out 2002
WrestleMania X8
Funny story: I even remember pulling out the shipment of WM X8 and saying to a co-worker "Hulk Hogan fought The Rock? Cool."
In later years, I've been able to pick up WM X7, X8, for hefty prices, but it still bugs me all that I missed.

- Circuitry Man I & II - Double Feature: Paid $72.99 on eBay last year. Goofy movies, but unique.
- Soultaker: Still haven't bought this because I cannot justify paying premium prices for it. It's not a good movie, but I remember it fondly from renting it several times in the early 90's. I will eventually break down, I guess.
- Black Scorpion: The TV Series: Paid a whopping $250 on eBay. Sight unseen, but I did enjoy the two movies, so I figure I'd like the show.

I would have said The Killer as well, up until about a year ago. I was able to find it new and sealed sitting on a back shelf in a small store. Once I blew off the dust, I promptly bought it. Incidentally, if you are still looking for a copy of Hard Boiled, let me know.

found a used, amazing condition copy of The Cook, The Thief, His Wife, and Her Lover at a videogame shop for $15 - it had just been announced to be OOP.

I prefer not to buy used or from ebay so it can be kind of hard for me to find new OOP titles unless I get lucky. I'd like to find

Wow! I didn't even realize many of the ones mentioned here are OOP. I probably have 60-70% of the ones in this thread (many still sealed) from the days when I could afford to buy everything (pre kids). I did already sell a couple years ago that I knew were worth something (1984, Black Scorpion Box, Barfly, Cook/Thief...), but it's probably time to unload a few more.
