Out of Sight has some good stuff from Scott Frank and Steven Sodebergh.

You asked for writers, but a great insight into directing can be heard on John Frankenheimer's commentary for Ronin.

I really enjoyed Roger Ebert's commentary for Beyond the Valley of the Dolls. Informative but informal, the joy he had working with Meyer and the madcap nature of writing the screenplay really comes through.

Tarentino does commentary for True Romance. I liked that one.
