Favourite DVD Extra?
Mine's commentaries.
I love them. One of the best ones I've heard (?) is the Dodgeball one. They're so horrible to the director, then they all just leave. Then the dudes just play then commentary to There's Something About Mary.
It's cool how there was two more commentaries on there though. It also has to be with one of the actors and the director or something. The James Bond commentaries are really dull. Not saying it has to be funny, but it's always better when one of the actor's are on board.

This was a close call... I might even reconsider my vote, because I think commentaries are the best way to get answers about a movie, because interviews may not lead a filmmaker into a specific train of thought like sitting in front of his own work can. However, I went with deleted scenes, mainly for nostalgia, as back in the beginning (so biblical, I know) that was the draw for dvds, really. In many cases this can be fun, especially comedies, where often scenes are deleted left and right for pacing reasons. But in the case of a great film, seeing what was left on the cutting room floor can put insight into how well a piece is crafted. On the other spectrum, it makes me sad, as in the case of, well let's just say Attack of the Clones, where you can see that the film could have been better if different decisions had been made in the case of what stayed and what went. Sometimes, nothing can give you a better idea at what makes a film the piece it is in the end than what no longer is in it.

DVD Talk Special Edition
Tough, tough call here. I'm gonna have to go with making-of features, because when they're done well, they put commentaries and other stuff to shame. I enjoy listening to commentaries as well, but nowadays they're either really entertaining (Simpsons, LOTR EEs, Sin City, Alien Quadrilogy) or really dull (Star Wars Trilogy, LOTR EE w/the technical artists
)

I don't know what to vote for. The bottom line is that I like extras that educate me on the movie, as in, why certain decisions were made, what went into making it, the meaning behind certain things, etc.
Some commentaries do a very good job of this and are insightful. Others are horrible and consist of a lot of dead space and "look, there's so and so..."
With making-of featurettes, again, some are very well done, and can show things you can't see in a commentary (obviously). Others are just fluff pieces and consist of clips from the movie with actors talking about how glad they are to be in it.
With deleted scenes, sometimes they can be interesting when they fill in gaps in the film and explain motivations better, but others are just crap and it's easy to see why they were deleted. I think that musical deleted scenes have more replay value, so they I appreciate those more.
I know I wouldn't vote for outtakes, although sometimes they can be enjoyable.
Although it's a tossup between commentaries and making-ofs, I think I'll give the edge to commentaries because they generally are more informative, if only because they usually last for the length of the film. They also have the side benefit of not taking up much space on the disc, so more information can generally be imparted more efficiently. It does depend on the title though.

I went with commentaries. The OP mentioned the Dodgeball one, I prefer the original, real track with Stiller, Vaughn and the director. The other is good as a joke but I don't want to listen to it again.
