It's more complicated than that. WWE has gone to great lengths to stomp out the "WWF" name. All those mentions of "WWF" will drive Vince nuts. It might seem crazy to us, but from a marketing perspective, they have jumped through hoops to insure acceptance of the WWE name.
Further, regarding Jesse, it doesn't matter what terms he is on with Vince. As per the court, he is entitled to money from every tape or DVD sold using his voice. Vince doesn't want to pay. You do the math.

On the recent Andre the Giant dvd the commentary for the Andre vs. Big John Studd match was replaced with Michael Cole and Tazz. Since it's just an old Coliseum video ported to dvd I'd bet anything else with Ventura on would get edited too.
