There was a show called Best of the West which I thought was great.
http://www.imdb.com/title/tt0081832/
It starred Joel Higgins, Tracey Walter and Christopher Lloyd.

"Longstreet' w/ Bruce Lee.
He was in four episodes where he taught a blind man martial arts. The pilot was called "The Way of The Intercepting Fist" or Jeet Kune Do in Cantonese. He basically played himself.
The other one season series I want to see on DVD is "Vanishing Son". I actually prefer the 3 movies they did before the series but would like to see it all again.

"Action!" is my personal choice for a quality 1-season show that should be on DVD.
"The Wizard" is my personal choice for a guilty pleasure 1-season show that should be on DVD.

I will second the earlier vote for Flying Blind circa 1992.
That was when I first laid eyes on Tea Leoni.
Also on my favorite list as a kid was Otherworld.
I remember it featured Marc Lenard (Sarek from Star Trek) as the recurring villain.

BTW, a few other one-season shows that made it to DVD:
Firefly
Freaks and Geeks
The Ben Stiller Show
The Twilight Zone (2002)
Clerks: The Animated Series
There's always hope!

(And I would have mentioned Voyagers -- one of my childhood favorites -- but I'm pretty sure that lasted 2 seasons).
Did you know that Meeno Peluce is Soleil ("Punky Brewster") Moon-Frye's half sister?

Powers of Matthew Star rocked, as did Voyagers and Misfits, but I always clamor for another season of "Class of 96" with Jason Gedric, Megan White, Brandon Douglas, and Doogie's hottie girl..what was her name?
Also, there was this show I think called "The Phoenix", I think he was from outer space and was Khan's right hand in Star Trek II..was that it? I liked that show...
