Resevoir Dogs: ten year has a rotating commentary which includes the cinematographer.

I believe that Se7en may, as well.

Peter Suschitzky has his own track on the Canadian release of eXistenZ.
The late Conrad L. Hall is a participant in one of the commentaries on Incubus (1965).
Newton Thomas Sigel is a participant in the commentary on Confessions of a Dangerous Mind.
Robert Rodriguez on El Mariachi and Spy Kids 2.

The great Michael Balhaus gives a very good commentary on the fabulous baker boys.

X-Men 2 has one. I really enjoyed Soderberg talking about how and why he chose the look for Traffic. And considering I'm in film school I had a pretty good understanding of what he meant.

I wish there were more of these myself. The two I"m most aware of are Conrad Hall(along with George Roy Hill and the producer of the making of documentary) on Butch Cassidy and the Sundance Kid. And on the original Charlie's Angels, McG and Russell Carpenter. Both are tremendous.

Theo Van De Sande - Blade (after seeing Norrington's next film, I'm thinking Van De Sande didn't get enough credit for Blade)

"Get Carter" (1971) features a nice commentary track from first time director Mike Hodges, star Michael Caine, and cinematographer Wolfgang Suschitzky. They apparently recorded these separately. Very interesting comments from all three. Suschitzky is listed in IMDB as being born in 1912; the DVD was released in 2001, so he must have been close to 90 when this was recorded; his memory of the details of scenes shot almost 30 years ago are vivid and he expresses them very clearly.

"Mad Max" (1979) has a fun track from designer Jon Dowding, cinematograper David Eggby, special effect designer Chris Murray, and critic Tim Ridge. Interesting stories by Eggby of hanging onto the edge of cars and motorcycles going 100 mpg with a 30 lb camera on his shoulder. These guys were all together in the same room when the commentary was recorded.
