After reading everyone else's replies, I have to add The Game and A Fish Called Wanda to my original short list as well.

Also, Moonstruck.

Forgot to mention this first time but definitely Crimson Tide SE is a must! When will they do justice to this movie?

I'm waiting on the following:

Goodfellas
Sleepers (early WB disc...dang flipper...got stolen during the raid of my first collection and I've yet to replace it...)

I am sure there are plenty others out there, but these two jump to mind...

Oh, yeah, The Adventures of Baron Munchausen: Criterion Collection and Fisher King: Criterion Collection would be nice.

I'd like to see a re-release of Pasolini's The Gospel According to St. Matthew b/c it is a great film, but the only version released is now OOP and goes for a hefty sum...

#1 is Blade Runner

Others include:
The Sting
Goodfellas
Matilda
Sorcerer
The Game
The Hit

I unfortunately own Christmas Story, or that would be on there as well.

My list of titles I want but haven't bought because I'm waiting for a special edition:

Iron Giant
Office Space
True Lies
Top Gun
Days of Thunder
Black Hawk Down
Blade Runner

I have the bare bones Shawshank, but would replace it in a heartbeat with an SE.

For me, the main one I'm holding out for is John Ford's classic The Searchers. A film of this magnitude deserves a two-disk release with lots of goodies (and no snapper).
