My question is simple. If using the same receiver, speakers and digital cable, are there any differences in the sound quality of an entry level DVD or CD player vs. a high end DVD or CD player?

My guess would be there are no differences since the Receiver would be doing all the D/A processing. It would be receiving a true digital signal from either player, where there is no quality to a digital signal. You either receive it or don't. Thus, you would hear the same quality of sound.

Actually, the quality of the playback transport makes a big difference in the output quality you hear. If you don't think so, listen to an entry-level Sony, Pioneer (or whatever mass-market brand) and then listen to a Wadia or CAL CD transport. There is simply no comparison. High-end components are just that: high-end.
Also, your processor makes a difference too. If you are running everything through an A/V receiver, high-end components aren't going to do much good as the poor DACs and weak amplifiers are going to destroy any benefit the high-end transport may have made.
High-end components deserve a seperate pre/pro set-up.
That being said, it's not like anything less then top of the line can't sound good. Not at all. But there is a difference between sounding 'good' and 'outstanding'. IMHO, of course.

I agree with DVD_O_Rama about the processor issue.

Also (although I don't believe it's as common as it used to be), some entry-level DVD players may not pass the DTS bitstream to your DD/DTS decoder.

I should have been more specific. Given that the Receiver (Denon 5700) is high end also, my take is it wouldn't make much of a difference.

I could see where the difference would be easily seen if you were using the D/A converters on the CD player via RCA cables but not when you hook up digitally and use the D/A converters on the receiver.
