I am looking for a good receiver that has the following features...
1> at least 2 component video inputs & at least one component video output
2> DTS capability
3> 6.1 capability (would be nice but not a must but 5.1 at least)
4> 7.1 capability (would also be nice)

No cool remote needed (already have the pronto- so if I can eliminate the high cost of a neato remote, all the better).
I don't know much about wattage and don't really plan on playing my films too terribly loud so power is not a necessity. I just want something that will give me a good separated sound experience.

Any help is appreciated!

You forgot one of the most important parameters,.....PRICE. If that is no problem, then the Denon AVR-5800 is the way to go.

Yeah, well I'm comfy in the $1000 area (+ or - a couple $100)

Before you commit to the Denon, Sony, Onkyo, etc., give the Outlaw a listen. It has most of the features you mentioned and costs $600. Its mail order only, but comes with the standard 30 day money back deal. You can order one and try it at home while you listen to other manufacturer's products. Then decide which unit is superior.

If you care about HDTV, make sure you get a receiver that will pass the 50MHz component video signals.
