what is the significance of DOWNMIXING??

currently, i watch my DVDs through a stereo 2 channel setup...i know that if a DVD is in 5.1, my player will downmix it to 2 channels...my question is whether there is a difference between downmixed 5.1 and listening to a 2.0 track or stereo track??

if you have a stereo receiver, do you hear Dolby 2.0 or does it automatically choose the stereo track? i'm assuming the same thing happens with DTS discs (although DTS doesn't downmix)
