Audio Cables

I know that digital coax or optical cable are best for DD/DTS 5.1 audio but can I still get 5.1 channelization from standard RCA composite cables?

No. Not from just the two RCA cables. If you have decoders in your DVD player and 5.1 ready receiver you could do DD/DTS with 5 or 6 RCA cables.
