Hmmm... this is a REALLY good question. I think I tie - film/philosophy/nutrition I think that eventually nutrition will beat all, because film/philosophy is mostly behind me.

Since I have an MA in History, the subject I've likely read the most on is 20th-Century US History.

But by far the greatest numbers of books I've read have been crime fiction. It must be a couple thousand.

Not quite sure I understand the question, so I answered with my most-read GENRE

Skiffy.

If we are talking "academic" subjects then I'd guess....

.... maybe English Lit, but it has been quite a long time!

Music theory books (composition, counterpoint, etc...)

Music autobiographies / biographies

Technical aspects of music, like waveforms, studio set-up, setting up microphones for various instruments, etc.

probably fantasy. I probably only read 2-4 books a year and since I have read all of the wheel of time so far which is 500-1000pg each it puts it over the top. Though I read everything.
