Wow... I was almost afraid that noone mentioned David Eddings.
The Belgariad is definitely my favorite fantasy epic series, and I agree that the Mallorean is not as good (but still great). The Elenium and the other one (can't remember.. The Tamuli?) are decent. I've read these at least twice, and would have several more times if I had more time.
I remember that my friends would ruin the story for me by telling me the endings... I hated that.
I also like the covers issued for the Australian printed versions a lot better... the US ones just look so plain. If I ever find them (sitting 400 miles away from me in storage in LA), I'll scan the covers and let you all know how good the Australian covers were.

Looking at the OP's question, belatedly I note that Melanie Rawn has announced that she won't be delivering the third in her series of Ambrai/Exiles books. From what I can see, the hiatus/cancellation seems to flow from a block/depression situation that wasn't subsequently overcome by producing some unrelated works.
At least she told people...
