Too many to name. Probably close to 100.

Back when I mostly played the xbox 360, I got around 100...it is harder to look that up because with the 360 every time dlc came out it would take away your 100% completion. On the Ps3 you got a platinum that they could not take away when adding DLC. I had only one Platinum on my ps3 though because I mostly played 360.
When the ps4 came out I switched my primary to it...and since then I have earned 101 platinum.

Star Wars Lego about 5 years back. I have no desire to 100% any video games these days.

Nothing. I play til the credits roll and then move on. I have about 6 platinum's and I think they are all from TellTale games so they don't even count haha.

I'm not going to count little arcade games as I do those off and on all the time...(and I don't feel like listing out a couple dozen games)
Valkyria Revolution (just finished yesterday)
Lego Batman
Lego Harry Potter 1-4
Lego Harry Potter 5-7
Lego Lord of the Rings
Diablo III: ROS
Never Alone
WWE Smackdown vs Raw 2010
Sonic's Ultimate Genesis Collection
Telltale: Batman & Borderlands
and then of course...
Peggle 2.

Not sure if I ever have. The closest I've got are the Arkham games. I got close with some of the Rockstar games too (the PS2 and 360 GTA games and Red Dead Redemption). I'm just not one that plays for achievements. Typically I'll try and make it through the main storyline and that's it.

With most games having some online component and thus having an achievement linked to online, I haven't "completed" a game in a while.

I've got somewhere between 5 and 10 at 100%. Quite a few at more than 90%. Most games require online play of some sort, so I don't get to 100% with those.

Xbox 360!
Nothing!
Xbox One!
On a technicality, there's Halo: The Master Chief Collection, which I have 1000 GS for, but that's 1000/6000.
PS3!
Vita!
PS4!
Online trophies make it extremely unlikely for me to get a platinum/100%.

- Forza Horizon 2 Presents the Fast and the Furious

PS3!
- Tomb Raider (believe I did everything on the map, got all upgrades, etc., though I don't have all the trophies)
- Scott Pilgrim vs. the World (before the DLC trophies, anyway)
Vita!
- The Walking Dead: Season 1
PS4!
- Grand Theft Auto V (100% completion, but didn't get all trophies)
- Just Cause 3 (100% completion, but didn't get all trophies)
- Ratchet and Clank
- Dead or Alive Xtreme 3
- Firewatch
- Gravity Rush 2 (minus DLC trophies)
- Rise of the Tomb Raider (100%-ed the map, although I don't have all trophies)
- Horizon: Zero Dawn (although I haven't gotten the post-release trophies patched in)
- NieR: Automata
Online trophies make it extremely unlikely for me to get a platinum/100%.

PS3
- Arkham Asylum
- Assassin's Creed 2
- Dante's Inferno (no DLC)
PS4
- Diablo 3: RoS
I loved RDR but the online component makes it impossible for me to get the Platinum.
I wish there was a trophy back then for FF VII and FF Tactics. I spent countless hours finishing the game 100%.

Depends on your definition.
If you mean 100% finished the game with all of the substantive primary and secondary content completed and the majority of achievements/trophies, including those with a "second completion" trophy, then a bunch. A few have hefty demands to get them all -- time-based, numerous completions, absurd difficult levels, online components, mini games I really don't like -- and I'll regularly swear to eventually get back to the game to do them, but rarely do. While playing, I'll make an effort to get those trophies where you collect stuff across the game's open map, but it'll grow old after a while and I'll either get on with finishing the game or I'll just move on to something else if it's the post-game period of a sandbox game.
If you mean 100% literally, as in 100% of all trophies/achievements have popped, then it's mostly just the Telltale Games and other interactive adventures (Pneuma, The Raven) that ensure you get 'em all, and just one or two others with manageable objective rosters. Two I haven't seen mentioned yet that I've wiped out are Far Cry 3: Blood Dragon and Murdered: Soul Suspect.

I got 100% on the free mobile Stranger Things: The Game recently. Although another character is supposed to unlock when the 2nd season hits.

Fallout 3 and the first Borderlands off the top of my head. I started playing Fallout 3 and played it a bit when it came out and then put it down for over a year. Got back into it and plowed through it and all of the DLC. The Borderlands trophies were collected as they came out. I am working on trying to 100% Lego Dimensions right now. My son loves watching me play that game. I do have 70 plus Platinum trophies but don't always feel the need to 100% games that have extra content that I am not interested in.

Way too many to count, although it seems like forever that my gamerscore has been stuck in the 290K(right now at about 296K) range. Ever since my son was born 9 years ago I went from getting around 4-6K gamerscore a month to now being lucky to knock out a couple hundred a month despite all the free games with gold we've gotten over the years.
