Old Yeller
Spoiler:
I wouldn't kill Old Yeller. Instead, he would have grown old on the farm and had lots of puppies.

Saving Private Ryan

Spoiler:
I'll have Upham killed in the last fight.
His coward character was for a different era (Vietnam), not WW2.

Spoiler:
I'll have James Ryan killed, too
, to make the ending even sadder.
Spoiler:
From "All those lives for one man" to "all those lives for nothing." If he had not been insubordinate (to George C. Marshall. no less), Fish and Horvath and Miller and Jackson would have lived.

Edward Scissorhands

Spoiler:
I always wished that Kate and Edward would've gotten together at the end. This movie depresses the crap out of me especially when Elfman's score comes crashing in right before the closing credits.

Goodfellas

I know it was based on a true story but by the end of the movie I liked the characters so much it was just painful to see what happens to them

It's also the only reason I hesitate to say it's my favorite movie of all time.Granted I only hesitate because truely it is

With Fight Club, i loved the theatrical ending but i think they book ending would have been a little bit better

Spoiler:
In the book, John Doe ends up what he believes to be heaven, but from his description, you have a pretty good idea that it is actually an Pysychatric Hospital

Minority Report
Even if this is a Spielberg pic, i actually liked it.
Spoiler:
I would have ended it with Tom Cruise being put into the prison and letting Sydow get away with it, instead of him being let out and eventually confronting Max Von Sydow

A movie that comes to mind is Paths of Glory. I personally like the ending, but I can see how people would like to omit the final scene.

Road Warrior - not the voice over part but......

Spoiler:
I like the idea they cover in the voice over but NO WAY this band of killers just walk from the wrecked tanker with out making sure he (heck make that everyone) is dead.. So a better ending to me would be to have him run the tanker off a small cliff.. We still see get too what it is filled with, he can still be alive on the side of the cliff (jumped out).. Ah but in this ending it makes sence that the gang can't see him so they leave..
