Hard to pick a single especially out of a series...

Assassin's Creed...pretty much al[ their cover art on all are top notch....Black Flag, Origins, Creed III, Creed IV, Odyssey \...just all really nice.
Far Cry....same thing, just really all put together really well..3, 4, 5 and even primal

All the old 2600 games with the painted art. There's even a book about them.

Go to Google Images and type in "Psygnosis Amiga Game Cover Art". Most of what you will see were commissioned works specifically for the games they made. All were incredible.
