Would this be difficult for someone that only played Rock Band/Guitar Hero on easy? I could never do the medium stuff, let alone the hard mode.

^ IMO you'll be fine.
This game has a lot of flaws - ones that could be fixed via patch if Ubisoft listens to the complaints out there - first and foremost you have very little control over the difficulty -- it automatically "adapts" to your skills which is both neat and frustrating. Secondly while there are a lot of functions and features, their implementations aren't quite there (learning Chords can be a little tedious due to the setup in the game, but at least they're there)
That said I'm loving the game.
I know guitar basics but I've primarily played GH and Rock Band (I'm a bit of a Harmonix fanboy and felt GH took a dive after #2 when they started adding ridiculous note charts, still played through them on hard/expert regardless), I feel the transition from that to Rocksmith has been nearly seamless, the first few stages focus on single note charts which is reminiscent of Easy difficulty in Guitar Hero. It's just with a much, much larger guitar (it's like a 126+ button version of Guitar Hero with 6 strike zones).
It's also a lot more satisfying, you get to hear yourself actually playing, and that's something they just couldn't achieve with other peripherals.
Rambling aside, I used to play Hard/Expert in all the GH and RB games, and I found the transition from that to Rocksmith almost seamless, and it's incredibly enjoyable.

I'm liking this game and have a lot more fun with it versus RB3. I've been playing guitar for about 10 years and consider myself an average player and can see this game encouraging me to progress.
A couple of comments/questions:
1. They really need to improve the menu system. It's just so clunky and not that easy to navigate.
2. I'm playing this through my home theater setup, optical audio cable to Pioneer receiver. Is this a preferred setup would the red/white analog connection better for this type of game?
3. Is it recommended to play this game through a 5.1 setting or through standard stereo 2.1 setting?
4. Is there anyway to increase the output of my guitar audio? I hear it but it is not loud enough. Of course my guitar volume is turned to 10.

I still haven't thrown this into the xbox after getting it for myself for Christmas. I just need some motivation, but the only guitar I have is the RB3 pro squier which, I hear, isn't very good. My buddy said he's got one or two to hand down to me, so maybe then.

The guitar in the bundle isn't all that bad from what I hear, but I would borrow his so that if you like it then go ahead and get yourself a better one if you decide to stick with it.

If you buy the guitar bundle, it comes with everything you need?
If you just get the game, you need a guitar and a cable that is sold separately?
Too bad Rock Band 3's pro mode didn't work with other guitars that have the right connection and the midi controller thing.

Yes.
The game comes with a cable. You'll still need a guitar, 'course.
If you wanna play multiplayer, I guess you'll need another cable, but I've never done that. If you have a guitar, everything you need is in the box.

I know a lot of people aren't too hot on the dynamic difficulty thing, but I love it. It's not that the game gives you a free pass; you can't progress in the game until you get to be reasonably okay at a song. You just aren't forced out of it part of the way through.

He has alot of guitars, probably at least half a dozen. But I'm sure they're a bit more expensive than the one that comes in the bundle
