I have the 360 version, but I don't want to open it if there isn't much difference from the regular version. There is a 20 dollar difference in price.

There's a big difference in terms of graphics.

I don't have a 360, so I was thinking about picking up the xbox version of Fight Night 3. Could I play against people playing on a 360, or only others with a regular xbox?

EA Chicago seems to have focused more attention on the XBOX360 than the other consoles. Overall background graphics, lighting, punch "after effects" are truly stunning on the 360.
A local brick and mortar had the XBOX Fight Night Round 3 for 29.99 and the XBOX360 version for 39.99. If you haven't purchased it already, it does go on sale from time to time.

Personally, I'd go with the 360 version. Not having a health meter and having to rely on your opponent's expressions and stance to tell how tired they sounds awesome and innovative. I thought it sounded kind of lame at first, but I came to appreciate the idea after thinking about how silly a health meter is in a realistic fight.
