Man i loved Scorched Earth as well.
Civilization was a huge game for me in college - i had a college roommate who was so hooked on the game i had to uninstall it so i coiuld actually use my computer. I also had to install Windows in Spanish so he couldn't reinstall Civ.

I already said Wasteland, but I have to also add Worms:Armageddon. Those two are the only ones I played a lot and kept going back to for years.

Only three?

Might and Magic VI (for some strange reason, this is the RPG that made an impression on me even though Ive played Daggerfall, Dungeon Keeper, Ultima series and the Wizardry series).

No One Lives Forever 1 (experience Doom as a 3d action game, experience Half-Life as story, experience Duke Nukem 3d as a fun game) but playing Cate Archer was the first game that made me as THAT character (to bad No One Lives Forever 2 didn't live up to its potential).

And finally,

Age of Empires 1 was my first expereince with RTS and I loved it! Gather wood, stone and gold and create an empire. I hope Age of Empires 3 could carry on the tradition.

..and pretty much any other type of game like that...Day of the Tentacle and Ripley's Believe It of Not: The Riddle of Master Lu rank way up there for me as well.

Dungeon Master (speaking of, did anyone actually complete Chaos Strikes Back?)

Age of Empires 2 + Expansion - I became quite proficient with the Turks in that game. With a mere 60 military units i could crush an enemy civilization 5 times the size of my attack force.

Serious Sam 1st + 2nd encounter - A no frills "shoot it if it moves" back to the basics game love it still.

Commodore 64 - Questron - I played the hell out of this game (kind of like Ultima).
Tie Fighter - I'm going to reinstall this tonight on my new XP box to see if it will work.
Add another vote for Betrayal at Krondor - I never tired of it.

Honorable mention:
Jedi Knight: Outcast (with the dismemberment code) - it was fun to cut stormtroopers in half!
