Of the soundtracks I own I like

- Panzer Dragoon
- Donkey Kong Country (a Japanese import I bought a few years back that is just plain goofy and fun).

I never really notice game soundtracks, but one that jumped up and punched me in the face was Akuma's fight music in the original Street Fighter Alpha. It was perfect for who you were fighting. The music sounded as if it told you 'if you don't know what you're doing you're going to die real quick'

I will go real old school and say Actraiser, the closing music number in particular was so powerful on my 2 speaker system way back when. I can olny imagine how nice it would sound in 5.1

I second Final Fantasy Tactics.
Also the soundtrack for Shin Megami Tensei: Nocturne is excellent. Quite a varied range of music, not just the typical RPG orchestras.

I'll put another vote in for Castlevania: Symphony of the Night. I also like the Vagrant Story and Parasite Eve soundtracks.
