If you're really into that stuff:
"Legend of Zelda: Ocarina of time"
"Legend of Zelda: the Windwaker"
"Jet Set Radio"
"Jet Set Radio Future"
I bought them from http://www.cdjapan.co.jp/, who I can recommend most highly.

DVD Talk Gold Edition
I never really notice game soundtracks, but one that jumped up and punched me in the face was Akuma's fight music in the original Street Fighter Alpha. It was perfect for who you were fighting. The music sounded as if it told you 'if you don't know what you're doing you're going to die real quick'

DVD Talk Gold Edition
I will go real old school and say Actraiser, the closing music number in particular was so powerful on my 2 speaker system way back when. I can olny imagine how nice it would sound in 5.1

DVD Talk Hall of Fame
I second Final Fantasy Tactics.
Also the soundtrack for Shin Megami Tensei: Nocturne is excellent. Quite a varied range of music, not just the typical RPG orchestras.
It's available for 2 bucks direct from Atlus
