There seems to be some discrepancy between Rebels (which is canon) and this (which is canon) about the removal of helmets. Sabine had her helmet off all the time and when she went to Mandalor, those mandalorians removed their helmets all the time in front of each other.
Going off the helmet rule, I would guess Boba Fett is a mandalorian but not part of the culture anymore. I can't imagine Mandalorians being happy with Jango's decision to let himself be cloned and take off his helmet all the time.
My best guess is that the group this guy was adopted into are "keeping to the old code" while some of the others (like Sabine's folks) have relaxed the rules a bit.

Just my opinion:
Like many cultures decimated by war, there are going to be varying incarnations and interpretations of “who they are”.
Mandalore is/was a planet with very distinct cultures on it already. Not everybody can be a warrior, but Mandalore gained notoriety for its warriors. Because fo this, the “warrior clan” or “warrior class” was particularly targeted for eradication by enemies such as the Empire. (Think of the samurai in feudal Japan.).
Being a warrior was not a birth right, but something that is earned. Thus, the Mandalorian warrior culture is something that could be spread and was welcoming to outsiders looking for their place, orphans, etc. If you could only attain this status by birthright, the culture wouldn’t last very long!
Even before The Purge, clans had varying codes and different levels of how strict their code was. These differences increase when you have a people displaced and decimated by an oppressor. Look at how religions evolve and change over time and distance.

Boba is an "unaltered" clone of Jango that was allowed to grow and mature naturally.... not with the sped-up aging that the clone army experienced, and not with any pre-programming in his brain like Order 66.

From what I recall, Mandalore is not only a planet, but also a culture that is very willing to absorb outsiders into its ranks.
As far as not taking the helmet off around others goes, I suspect that might be some kind of vow or oath that only certain Mandalorians take. So Sabine and others can choose whether or not to wear their helmets at any given time.

Escort missions are the worst part of video games, but The Mandalorian is basically Escort Mission: The Series and it’s awesome. I would play the hell out of Escort Mission: The Series: The Game.

I wish we would have gotten a better look at the AT-ST in the episode. It had a custom paint-job, presumably done by the Raiders.

For the Life of me I don't get all the love with this show. I like it, but all the praise its getting as being amazing I just don't see. Like I said it's not bad but I've had no real desire to watch it as fast as I could either.

It's enjoyable Star Wars content. Something that a lot of us feel we haven't gotten in years. I'm sure the reactions would be more toned down if the previous films were more widely considered good content.

It's because it's more like the "old" Star Wars than any of the newer movies have been. Nostalgia factor in play.

I agree. It's solid Star Wars without shitting on anything that came before it. It has the look and feel of the OT, and we've all wanted to see Boba Fett(like) armor doing something cool since 1980.

Neither me or my wife have any nostalgia for Star Wars and we both love this series. It's just a damn good show even if wasn't connected to Star Wars.
