Since they had mentioned Thanos a couple episodes ago, I was hoping the final shot of the finale would've been that shot of Coulson and May holding hands, with a closeup of their hands, as one of their hands fades away into dust.

One thing I've always wondered about Shield's place in the MCU (before winter soldier) is if they were the intelligence apparatus, what does the USA have the CIA for? Would that not be redundant?
Plus shield evolved from the SSR, so it should predate any need to have established the CIA post war.
The only thing I can think of is that SHIELD was a semi-global intelligence force (e.g. shared by NATO allies). Would explain why there was a world council that Fury reported too.

SHIELD was created in the sixties during the spy boom of the sixties. It was Marvel's version of U.N.C.L.E. vs THRUSH, CONTROL vs KAOS, ergo SHIELD vs HYDRA.

That would make sense and would align with the introduction of shield in the first IM movie. Since nobody in stark industries had seemed to have heard about them.
(Even though that seems odd, since they have a triskellion HQ and budget for warships).

Graviton looked fat and his goatee and eye liner were distracting. Adrian Pasdar also played him like a Hammy Clown... Was glad to see the blasted into space money shot.

I think you and others are overestimating how much the TV and movie productions shares. I think they knew just as much about IW as we did. In other words what was in the trailers. I don't think they had any foreknowledge about the ending of IW. Even though it was the Russo bros. that were directing the Winter Soldier during that epic crossover with Agents of SHIELD I'm not sure how much they had to do with it or if it was more of an executive decision. Either way, sadly, those days are over

So it's schedule-wise just like them working a normal network TV schedule shooting 26 episodes.

From what I could tell, it looks like "Sarge" and his crew are moving through the multiverse exterminating realities that have whatever the black crystal is supposed to be, and now it's on the MCU earth...?

Judging by that trailer it looks like they are keeping Clark Gregg around as the season villain or some kind of clone of Coulson. That's going to be an adjustment considering how noble Coulson has been.
Well, I'm happy that we're going to have Shield around for at least 2 more seasons and even better as summer entertainment. At least it won't get buried/ignored like many shows suffer from during the TV season.
