2 cell phones, 1 number

I'm thinking about getting a Google Nexus One phone when it's available for verizon.

There are going to be a lot of times where it would be hugely beneficial to have the power of a smart phone in my pocket, but there would be other times in which having something expensive and large in my pocket would be detrimental.

I don't know much about SIM cards (my current phone doesn't have a SIM card [or at least, I'm not aware of a SIM card that is easily removable]), but would I be able to get a smartphone, then buy a cheap, but tiny non-smartphone, and swap the SIM cards back and forth, depending upon which of the two phones I want to use?

Verizon doesn't use SIM cards. You, however, may switch between phones by dialing *228, and using option 3 on the phone you want to activate. You can do this as many times as you'd like.

I had to do this with an old phone I had with Verizon when my wife washed my regular phone. Works very smoothly.

Can you do this on one cell phone plan? Or would I have to get a plan for each phone?

All on the same plan. It will ask you what number you want to activate and your passcode.
