If I legally have three product keys, can I give one away?
I have bought Office:mac a few years back and on the case there were three separate product keys and it says I can install it on three unrelated machines.
Is it legal for me to give away one of my product keys to someone, since I've only used one and don't have a need for the other two?

Read the SLA (software license agreement). They are meant for your personal laptop and desktop with one extra (for any needed reformat). And of those two installations, you are only "allowed" to use one at a time.
So, yes, it would be illegal to give one away.

IANAL and this may be a fine point, but it is not illegal to give it away. It may be in violation of the licensing agreement, but there is no law against giving it away. The shrinkwrap license agreement may or may not be enforceable depending on which court case you consider.
I would tell your friend to install OpenOffice and not worry about a license key.
