Why so many random words in a SPAM email?

I just this email for some FREE GIFT PRIZE!!!

scallop melissyl bricklaying intermediation credulousness psittaceously valerianaceous hatefully antitotalitarian graduating gastromycosis bijective dereligionize Earlene
Do those words fool the spam filter or something?

I also get some that say something like [email protected], to get past the filter.

It's an attempt to fool the Bayesian filters, I believe.
