DVD Recording speed

My DVD recorder allows EP, LP, SP and XP speeds. The higher the quality, of course, the less you can fit on a DVD. My question is this: I want the best possible quality, so I am thinking of using the highest (XP) speed. However, I am wondering why DVD movies that are sold commercially can hold 2-hour movies plus other material. Aren't they recorded at the highest speed? Or are they just larger than the 4.7GB disks that I am using?

The commercial DVD's are most likely dual-layer (8.5GB) discs. If you have a dual-layer computer burner you can use them as well, though they cost substantially more than the single-layer discs. Not sure if there are stand-alone dual-layer DVD recorders.
