I would love to see [director] make a [genre] movie
I would absolutely love to see Tarsem Singh ("The Cell", "The Fall") make a straight out horror flick, something along the lines of "Hellraiser". I think that would just be absolutely mind blowing.

I would have loved to have seen John Caprenter (the 80's version) make an actual western (instead of just aping the genre).

Ditto. I'm not a Tarantino fanboy, but his films always have scenes of very intense suspense. I would like to see what he could do with a horror movie, especially something supernatural.
I would also like to see Spielberg go back to horror. We've all heard how he did practically everything on POLTERGEIST. Why hasn't he ever made another movie like that? Would that be too low-brow? Considering how scary JAWS, POLTERGEIST, and parts of JURASSIC PARK were, he apparently has an affinity for scaring people.

Really though I don't think its so much that people think cinema begins and ends with Tarantino, but more along the lines of he is one of the best current directors/writers out there. He really hasn't made a movie I didn't somewhat enjoy and I just happen to think he could do a lot of different genres well.

I would love to have seen Ridley Scott make a pirate movie, but that would only have gone over before the Caribbean franchise started. Basically something more serious and less whimsical. I also thinks Scott could make a good movie about bikers, like a Sons of Anarchy type movie.
And just to join the wankfest, see Quentin Tarantino make a Godzilla movie.
