more specifically, how does this company not get sued with blatant ripoffs like:

Allan Quatermain and the Temple of Skulls

AVH: Alien vs Hunter

I Am Omega

Snakes On a Train

Halloween Night

Sunday School Musical

and the incredibly lazy, The Terminators???

I've thought about it as well. but...they don't really matter. How much is Asylum worth anyway? How much do they make from all this?

They only exist to fool J6P at the local video store to pick up their movies when they remember seeing commercials for it during it's theater run and they think it's out on DVD already. If you notice Asylum's release dates, their rip off's always come out around the theatrical or DVD release of the "real" movie.
They have to be making a profit because they've been around for years now. I for one have never seen an Asylum DVD in a retail store, so they must make all their money from rental revenue.
